No, it would make the game to annoying.

Having to EV train pokemon every time one died...

Yes, i would continue playing.
I would just catch some more pokemon.

It'd be just like doing a Nuzlocke run, but you can catch new pokemon. So no, I probably wouldn't since I've already done a Nuzlocke and have no need to go through that again.

You know that you pokemon doesn't die in the end of battle, right?

It only faints which sounds odd by itself
