Here how it go:
You enter a house and a little girl run toward you(she is crying). She said that she had lost her Espeon . It's very important to her since her mother give it to her for her birthdays. Then you came talk to the mother, she begging you to find the thief and bring the Espeon back.  When you get out of the house, you saw a kid training an Espeon, but the Espeon doesn't listen. As you approach him, the kid twin stop you and wanted a battle(his team will be 5 eevee evolution). When you beat him the kid attack you(same team just higher lvl ). When you beat him, a story will take place. The kids will just explain why he stole that Espeon and realize he was wrong so he give it back to you. You bring it the the girl. Her mother will reward you with an egg, which when hatch an eevee.

Not trying to be crucial but:

Walk in a house--> a girl come crying to you stating that her Espeon is taken-->talk to her mother--> you go outside and coincidentally find the thief with Espeon-->Battle--> Re-batte with same pokemon but at higher levels without training anywhere, just magically got higher leveled eeveelutions--> plead--> thief gives back Espeon--> you give Espeon back--> girl's mother gives you eevee egg--> Quest Completed.

Correct?
Even if one person steales waht you deserve, your reward will be even better than the last if you head down the right path.

Yes, but  they are twin, so the first one have lower level than the 2nd one.

When you beat him, a Dialogue/Cutscene will take place. These kids will just explain why he stole that Espeon and realize he was wrong so he give it back to you. You bring it the the girl. Her mother will reward you with an egg, which will hatch into an eevee.

I revised a bit here and there, just to make sure his Idea is Clear.

I assume this is a beginner's quest, hence why the quest is easy.

 The thing that bothers me is that it basicly has no story to it. The quest is basicly just this.

You walk into a house.
You talk to a girl, who asks you to find her Espeon.
Her mother does the same thing.
You walk out of the house.
You battle a kid with five Eevee evolutions.
You battle a kid with the exact same pokemon, but they're at a higher levels.
You take the Espeon back to the little girl.
You get a reward.

There's no story to it that makes it interesting.

In that case, make it part of a Quest Chain.

Example: Later on you find this is common, as Pokemon keep being taken, and your task is to discover why.

Which could ultlmately stem out to the Crime Syndicate of Miryus.

 That's what I was talking about. If this is a single quest, it has no story and it's uninteresting. If there's more quests related to it, there would be a storyline, and it would be more interesting.
