If you're heading for an evolution of Eevee team, you're pretty good with the movesets of each individual(unless you've used Smogon for the movesets.. =/, not a whole much of credit). ^^
My opinion for edit:
Jolteon
moves: Tbolt, Hidden Power (Grass), Volt Switch, Toxic/T-wave
Espeon-Modest or down attack and up Sp. Def
(okay on the idea... but I'm NOT a fond with being the barrier build) my twitches on this would be:
moves: Reflect, Calm Mind, Batton Pass, Psychic (for STAB)/Shadow Ball
Glaceon
moves: Protect, Toxic, Ice beam, barrier

Flareon- http://www.smogon.com/dp/pokemon/flareon Choice Scarf build

OR

Umbreon (an opinion but he is still useful)- Jolly or Up Speed down Sp. Atk
Item: Salac Berry
